What year did Hi Power grips change from from the flat wood style to the plastic style with the curved thumb rest?

I'm not sure you can put a specific year on such a change. FN has offered 'composite' grips since at least the 1ate 1950s on the HP. The wood grips were made in parallel with the plastic for a long time. The nylon grips with finger grooves on them started in the early 1980s... though I don't recall ever seeing a specific year. The nylon grip panels showed up in 1982 when the Mk II High Power was released.

You covered the grip question quite well, the first plastic style imitated the wood panels, the thumb rest style came much later to the end of production I believe.
